21 Day Fix Fuzzy Squash/Zucchini Boats

I always like to keep my eye out for new healthy foods to try when I am grocery shopping. The last “unfamiliar” veggie that I bought was called a Fuzzy Squash or Mo Qua. I pulled out my phone in the grocery store and googled it to see what the heck it was! After some quick research, I came to the conclusion that I could use it like a Zucchini.

So you are probably thinking “What in the world is as Fuzzy Squash and how do I use it?” A Fuzzy Squash is actually not even a squash, it is a gourd! It is similar to a winter squash or melon and it resembles a large and very hairy zucchini. The Fizzy Squash has a thicker skin and is covered in small, fine hair. You can eat the skin of the squash, but you need to use a brush or your hands and run it under water to remove the hair. It can be used in the same way as a zucchini – fried, cubed, added to stir fry’s or soups, or baked in the oven.

I had previously made some Zucchini boats using ground turkey so I thought I would try something similar with this. It turned out great, and we really enjoyed it! Sometimes it pays to try out something new!

21 Day Fix Fuzzy Squash/Zucchini Boats

Makes 2 servings

  • 1 Fuzzy Squash or Zucchini
  • 1 lb of Ground Turkey
  • 1 Can Fire Roasted Tomatoes, low sodium tomato sauce or crushed tomatoes
  • Sliced mushrooms (optional)
  • 1 Cup of brown rice noodles (or rice or quinoa)
  • 1 tsp olive oil (I used mushroom flavour)
  • Low Fat Mozzarella Cheese (1/2 blue)
  • Spices to taste

Directions:

Cook and brown the ground turkey, add in a green container of mushrooms if desired. In the meantime, slice the Fuzzy Squash or Zucchini in half and scoop out the middle. Put it in the over and cook at 350 until it is about half cooked. Add the tomato sauce and spices to the ground turkey. Cook the noodles, rice or quinoa, toss with flavored olive oil and set aside. Take the zucchini halves out of the oven. Layer the noodles and then the meat mixture. Top with shredded cheese. Bake about 15 more minutes until the zucchini is tender and it is heated through. Enjoy :)

Note: I had never heard of or used a fuzzy squash until I saw it in the grocery store. I decided to try it. It is a member of the gourd family. I treated it like Zucchini. It had a different taste though, more like a pumpkin/squash taste to it compared to a zucchini which is fairly mild.
