1Slice your pork tenderloin into medallions. Cook them in a frying pan. Season as desired (salt-free seasonings only).
2Slice an apple into thin slices. Put in a frying pan and drizzle with a fruity balsamic vinegar and cinammon. Add a little water to help cook the apples down. Cook until tender and syrupy.
3Place the "applesauce" over the pork medallions.
4For a full meal, serve with a side of sweet potatoes and broccoli.
