Do you have a sweet tooth? I sure do! And I LOVE carrot cake! BUT after the last carrot cake I make (actually it was the first and probably the last) I was shocked at the amount of butter and cream cheese that was in it. Don’t get me wrong, it tasted AMAZING, but I am not that interested in working hard on my health and fitness to undo it all with a few pieces (or a whole) cake! So I found and tweaked this recipes for these little gems. They taste like carrot cake and they are MUCH healthier.
***Tip – I had trouble locating the Medjool Dates in the groceries stores when I live. I finally found them…by the fruit! Not down the aisle like I was expecting. So if you can’t find them, be sure to check in the produce section of your grocery store.
