*Healthier* Chocolate Peppermint Muffins
Ok guys, I have a really great recipe to share with you! This is a healthier version of Chocolate Peppermint Muffins! Now I say “healthier” because they still aren’t something you want to sit down and eat an entire batch of at one time (well, you will want to, but they aren’t THAT healthy). BUT they are a great alternative to many other things we may reach for during those chocolate cravings! I mean who DOESN’T love chocolate with peppermint?
This is a lifestyle…not a diet, so it is still important to treat yourself to things that you enjoy. I wanted to share this recipe with you because I really enjoyed them (and they are also husband approved). I threw the ingredients into my Blendtec blender until smooth and it was simple as that!
Once it was blended and smooth I divided them into my muffin tins and baked them. The hardest part was waiting the 20 minutes for them to be done! They made the house smell delicious! For once Dave came home from work to the smell of ACTUAL baking, not just the yummy smells of the Scentsy
I love that theses Chocolate Peppermint Muffins use chickpeas! Ok, so they don’t have the exact same texture as muffins made with flour, they taste great and the texture difference doesn’t bother me that much. The taste makes up for the change in texture. I also substituted Young Living Peppermint oil in rather than regular peppermint extract. I love my Young Living Oils
