Healthy Candied Beets

Ok…so up until a few weeks ago I “didn’t like” beets. At least I thought I didn’t. It was one of those things where as a kid you don’t like something and you just assume that as an adult you won’t either. Since starting my health and fitness journey a few years ago, I have been WAY more open to trying new things, or finding ways that I like certain foods that I KNOW are good for me!

This recipes is seriously the BOMB. It is simple and uses 2 heart healthy ingredients. Beets and coconut oil. That’s it! Oh, and a sprinkle of sea salt. If you are on the fence about whether or not beets are for you, you definitely have to give this simple beet recipe a try!

Healthy Candied Beets

If you are new to working with beets, I would suggest wearing gloves so your hands don't turn red! Also, beware - you may pee red the next day!

2-3 lbs Beets, peeled and diced

2 tbsp Virgin or Extra Virgin Coconut Oil, melted

1/2 tsp Sea salt


1Preheat the oven to 400 degrees. Line a baking sheet with tinfoil.

2Place your diced beets in a bowl and drizzle melted coconut oil and sea salt. Mix until they are coated and spread them onto the baking sheet.

3Bake at 400 degrees for 40-50 minutes. The longer you leave them in, the more "candied" they will be.
