Sauteed Sunburst Squash with Feta

Sauteed Sunburst Squash with Feta (aka Pattypan squash) fresh from the Farmers Market. They were delicious…of course cheese makes everything taste good. This was my first experience with these and we really enjoyed them! I thought about stuffing them but they were a little small so I decided to sautee them instead. I would say it was a success! They taste similar to zucchini, and like most squash are low in calorie and high in vitamins and minerals!

Ingredients
Sunburst squash (Pattypan squash)
Olive oil (I use flavored)
Sea salt and pepper to taste
Feta Cheese
Directions
Slice the Sunburst squash lengthwise into 3 or 4 slices (could also just cut them in half if they are small). Heat the olive oil in the pan and add the sliced squash. Season with sea salt and pepper. Cook for about 5-7 minutes until the squash are tender. Remove from heat and sprinkle with feta or Parmesan cheese.

Sunburst squash taste similar to zucchini, and like most squash are low in calorie and high in vitamins and minerals! Try this quick and easy recipe...and it is even 21 Day Fix Approved!

3 cup Sunburst squash (Pattypan squash)

2 tsp Olive oil (I use flavored)

Sea salt and pepper to taste

1/4 cup Feta Cheese

Directions
