Ingredients

8 egg whites or 2 eggs

Spinach and mushrooms (1 green)

Feta Cheese (1 blue)

1 piece of Ezekiel or whole wheat bread (1 yellow)

1 tsp coconut oil

Directions

1Beat the eggs with a fork and pour into a hot frying pan.

2When the eggs are mostly cooked through, place spinach, mushrooms and cheese on one side of the omelet and fold it over. Cook until eggs are cooked through.

3Toast the bread and butter it with the coconut oil.
